Ingredients:
- 2 Bananas
- 1 Cup Pumpkin Puree
- 2 Eggs
- 1/3 Cup Canned Coconut Milk
- 1 Cup Coconut Sugar or Brown Sugar
- 1 Tablespoon Vanilla Extract
- 1 1/2 Cups White or Whole Wheat Flour
- 1 Teaspoon Baking Soda
- 1/2 Teaspoon Baking Powder
- 1 Teaspoon Cinnamon
- 1/2 Teaspoon Nutmeg
- 1/2 Cup Chocolate Chips + more for sprinkling
- 1/2 Cup Walnuts, chopped
Directions:
- Preheat oven to 350
- Grease loaf pan with coconut oil or line with parchment
- Mash bananas in large bowl and whisk in pumpkin, eggs, sugar and milk until smooth
- Whisk in flour, baking soda, baking powder, salt, cinnamon and nutmeg. Fold in chocolate chips.
- Scrape batter into prepared ban and smooth the top. Sprinkle with additional chocolate chips
- Bake for 50-55 minutes
- Cool then remove from pan and slice.
