Soyaki Baked Salmon

My new favorite quick and easy weeknight meal! I love serving it with Jasmine rice and asparagus.

INGREDIENTS:

  • 1 lb salmon (I leave the skin on)
  • Soyaki (from Trader Joes)

DIRECTIONS:

  1. Pull the salmon out of the fridge, rinse with cold water and pat dry.
  2. Preheat the oven to 375 degrees.
  3. Line a glass pan with enough tinfoil that can fold over the salmon.
  4. Top salmon with Soyaki and enclose tinfoil around the sides and top of the dish.
  5. Bake for 15 minutes or so, until cooked to your liking.
  6. Remove from oven and turn heat to broil. Remove tinfoil from the top of the salmon and return to oven for 3-5 minutes.
  7. Spoon excess Soyaki over rice and enjoy.
