My new favorite quick and easy weeknight meal! I love serving it with Jasmine rice and asparagus.
INGREDIENTS:
- 1 lb salmon (I leave the skin on)
- Soyaki (from Trader Joes)
DIRECTIONS:
- Pull the salmon out of the fridge, rinse with cold water and pat dry.
- Preheat the oven to 375 degrees.
- Line a glass pan with enough tinfoil that can fold over the salmon.
- Top salmon with Soyaki and enclose tinfoil around the sides and top of the dish.
- Bake for 15 minutes or so, until cooked to your liking.
- Remove from oven and turn heat to broil. Remove tinfoil from the top of the salmon and return to oven for 3-5 minutes.
- Spoon excess Soyaki over rice and enjoy.
