I made a variation of this on accident the other day and definitely had to add to the regular list of dinner rotations!
Ingredients:
- 1 lb salmon filets
- 1/2 tablespoon olive oil
- 1/2 lime, juiced
- 1 tablespoon coconut sugar or brown sugar
- 3/4 teaspoon chili powder (I used the chili lime seasoning from Trader Joe’s)
- 3/4 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/8 teaspoon cayenne pepper
- ¼ teaspoon salt
- Ground black pepper
Instructions:
- Line baking sheet or 9×13 pan with tinfoil.
- Preheat oven to 400 degrees.
- Rinse salmon, pat dry and place skin side down on tinfoil. Drizzle with olive oil and lime juice.
- Make seasoning: mix together sugar, chili powder, cumin, garlic powder, paprika, cayenne, salt and pepper. Rub seasoning all over the salmon and cook for 15-20 minutes (or to desired doneness)
