Sweet & Easy Baked Salmon

I made a variation of this on accident the other day and definitely had to add to the regular list of dinner rotations!

Ingredients:

  • 1 lb salmon filets
  • 1/2 tablespoon olive oil
  • 1/2 lime, juiced
  • 1 tablespoon coconut sugar or brown sugar
  • 3/4 teaspoon chili powder (I used the chili lime seasoning from Trader Joe’s)
  • 3/4 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/8 teaspoon cayenne pepper
  • ¼ teaspoon salt
  • Ground black pepper

Instructions:

  1. Line baking sheet or 9×13 pan with tinfoil.
  2. Preheat oven to 400 degrees.
  3. Rinse salmon, pat dry and place skin side down on tinfoil. Drizzle with olive oil and lime juice.
  4. Make seasoning: mix together sugar, chili powder, cumin, garlic powder, paprika, cayenne, salt and pepper. Rub seasoning all over the salmon and cook for 15-20 minutes (or to desired doneness)
