A healthy cookie that you can snack on all times of the day! I made these a lot while nursing my baby since I was ALWAYS hungry! Option to add in swap out chia seeds for brewers yeast to make these lactation cookies, but these already have flaxseed which are known to help supply as well! Linking the brewers yeast I bought here in case you want to add.
Ingredients
- 2 ripe bananas, mashed
- 1/2 tsp vanilla
- 1/2 C nut butter of choice
- 2 eggs
- 1/4 C maple syrup
- 1.5 C almond flour
- 1 C rolled oats
- 1/2 tsp baking soda
- 1 tbsp chia seeds (or brewer’s yeast)
- 1 tbsp ground flax seed
- 2 tbsp shredded coconut or flakes
- 1/4 cup chopped nuts
- 1 cup chocolate chips
- pinch sea salt
- dash of cinnamon
Instructions
- Preheat your oven to 350 and line a baking sheet with parchment paper
- In a large bowl or kitchen aid, mix together the wet ingredients (bananas, vanilla, nut butter, eggs and syrup)
- Add in the rest of the ingredients and mix until combined
- Spoon about a tbsp of batter onto your baking sheet and bake at 350 for 15 minutes
- Store on the counter for 2-3 days or in the fridge for up to a week!
