Lime Grilled Salmon with Mango Salsa & Coconut Rice

In the summer we’re always looking for light refreshing healthy dinners, this GRILLED LIME SALMON with MANGO SALSA + COCONUT RICE is a new favorite! 🥭Tip: the mango salsa is pretty great on its own too with your favorite tortilla chips!

Lime Grilled Salmon with Mango Salsa & Coconut Rice

Ingredients:

Salmon:
1 lb skin on salmon
3 Tbsp olive oil, plus more for grill
Zest from one lime
2 Tbsp fresh lime juice
2 cloves garlic, crushed
Salt + pepper

Coconut Rice:
1 1/2 cups canned coconut milk
1 cup jasmine rice
1/2 tsp salt

Mango Salsa:
1 mango, peeled and diced
1 avocado, peeled and diced
1/2 red bell pepper, chopped
1/3 cup chopped red onion
1/4 cup chopped fresh cilantro
1 Tbsp fresh lime juice
1 Tbsp olive oil
Salt and pepper, to taste
Optional: diced jalapeño to taste

Directions:

1. Marinade: In a baking dish whisk together olive oil, lime zest, lime juice, garlic, salt & pepper to taste.

2. Place salmon in baking dish (skin side up) and marinate in 15 – 30 minutes. Preheat a grill over medium-high heat during last 10 minutes of marinating.

3. Whisk together oil, lime juice, salt and pepper in medium bowl. Chop up all ingredients in mango salsa and add to the bowl with oil and lime juice.

4. While salmon is marinating prepare coconut rice. In a medium saucepan bring coconut milk, rice and salt to a full boil and cook 15 minutes.

5. Brush grill grates with oil. Place salmon on grill (skin side down) and grill about 6 minutes per inch (will vary on every grill) Depending on the grade of your salmon you may be able to eat it slightly undercooking which is always my personal preference.
